Columbia’s Culinary Arts Centre: Frequently asked questions

Columbia’s Culinary Arts Centre is one of the cheapest culinary schools for you to apply to if you are interested in learning the different styles of cooking in the United States and countries all over the world.

If you are wondering about what you can expect from our culinary school, here’s a list of frequently asked questions that might answer your inquiries about our culinary centre:

What time do I need to arrive for my lesson? 

You don’t need to arrive too early for your scheduled classes. However, we do recommend coming to class at least 10 minutes before it starts so you can prepare the materials that you would need along with your ingredients. This is the standard, but it would also depend on your instructor if they would let you stay in the reception area. 

Am I allowed to take leftovers home? 

Unfortunately, we have insurance restrictions on our premises and thus, we are not allowed to let you go home with the food you have prepared. We do advise coming insufficiently hungry for the class so you can enjoy the meals that you and your classmates have prepared. 

Should I have dinner before coming into a class or will we be eating there? 

As we have mentioned before, all the foods that you are going to prepare in the class would also be consumed by you. For that reason, we don’t recommend eating before the class since you would feel full already before you can even enjoy what you have prepared. 

Can I get a copy of the recipe during class? 

Yes, you are eligible to get a copy of the recipe that we will distribute to the class. You can use these recipes to practise even outside of the culinary centre. Despite having the recipe on your hands, we still advise you to listen carefully to your instructors and to focus on their words. 

Am I allowed to bring my own bottle of wine? 

Based on the rules in our institution, no student is allowed to bring alcohol inside the school premises. This means that you cannot bring your own wine. We do accept recommendations for wines!

Can I cancel my registration? 

You are allowed to cancel your registration at least 3 days before school starts. We can help you with the process of cancelling your registration if you call us during business hours. If you cancel less than 3 days before class starts, you would not be given a refund since your instructor has already purchased the necessary ingredients on your behalf.

Is this your first time cooking? We welcome you into the world of culinary! To help you prepare your dishes easily, you first need to have the complete set of cookware in your kitchen. Since this is your first time, our professionals based in the United States will guide you through the essential tools you need to have. Check the list below and prepare to fill your shopping carts with these items! 

Non-stick pans 

Non-stick pans are convenient to have in an apartment or home. You can cook basically in these pans from sauce to fried dishes. What makes it even better is that these pans are low maintenance so it’s right up the alley of a beginner cook. To ensure that non-stick pans would last long, we recommend using silicone utensils with them or scrubbing the surface of the pan gently. 

Soup or stock pot 

Just as the name suggests, these pots are where you make your stocks. It should be deep enough to hold litres upon litres of water and broth. If you want a hearty meal, all you have to do is use this pot to boil your preferred meat until all its flavours seep into the water. 

3 quart saucepan

A 3 quart saucepan is the perfect size for when you are cooking for one person only. It is small enough that you can mix and cook the sauce in small amounts. This is something that you can’t do in bigger pots. Not only would that be too big for a minimal amount of sauce, but it would also be a waste of gas since it would be harder to heat bigger pots.

Mixing bowls 

Whether you’re in the United States or not, it is inevitable for you to mix in the kitchen and doing this would be difficult without a mixing bowl. These bowls can come in different sizes depending on what or how much you need to mix. There are some mixing bowls that come with a lid. We recommend those lidded mixing bowls in case you need to store some of the ingredients you have prepared. 

Knife 

Of course, we can’t leave out knives when it comes to kitchens. A knife is necessary to cut your ingredients into thinners or in smaller pieces. There are multiple kinds of knives and each of them is used differently. 

First, you have your bread knife. It is not sharp but it has enough edge to it to cut bread. Next, we have the butter knife. This knife has a unique tooth that allows you to cut butter without a hitch. As for meats, we recommend a chef’s knife. You can use it for any ingredient you need to cut in the kitchen from small herbs to meat.

The internet may offer you a wide array of suggestions on how to improve your cooking but none of them would ever compare to tips from actual experts who have worked in the field for decades. That is exactly what we want to impart to you right here at Columbia’s Culinary Arts Centre. 

Our experts collected the tips that they can only recommend through years of experience abroad and in the United States. Every piece of advice that we are going to share with you today is something that you would only hear in your culinary classes so pay close attention and bring out your notepads as we list down the most effective ways to create good food! 

How to grill a perfect steak 

Creating the perfect steak might sound simple, but it is harder than you think. You might capture the right consistency, but the flavour may not be up to standard. To create the perfect steak all you need to prepare is salt. 

That’s right, a little salt is all you need and you have to lather it on the steak at least two hours before you put the meat on the grill. Make sure that you sprinkle salt on both sides of the steak. Once you are done, place it on a wire rack on a rimmed baking sheet. 

By doing this method, you allow the meat to keep its juicy texture. After two or three hours, you can pat your steak dry with a paper towel then season it again with salt and pepper. We recommend using kosher salt for that crispier look on the crust of the meat. 

Making fluffy scrambled eggs 

Have you ever wondered how chefs manage to make their scrambled eggs extra fluffy? Well, we’re here to let you in on a little culinary secret. It’s simple, all you have to do is to cook your scrambled egg the same way you usually do. 

Make sure you don’t overcook it and turn off the heat when ¾ of the egg is already cooked. Continue cooking the egg with the remaining heat from the pan and season it with salt after you are done. We recommend using kosher salt to keep the eggs moist and fluffed up. 

Peeling garlic easily 

According to professional chefs in our culinary school, you can peel a bunch of garlic cloves all at once by placing the cloves in a bowl and covering the bowl with another bowl to create a dome-like shape. Once you are done, you need to shake your dome vigorously for a few minutes and voila! All your garlic cloves are peeled from their shells. 

Keep the cutting board steady 

Keeping your cutting board steady is one of the requirements in keeping your cuts fast-paced and preventing accidents in the kitchen. One trick that you can do to keep the board steady is to place a wet paper towel at the bottom of the chopping board. It will keep it in place no matter what you are chopping up. 

De-stem herbs fast 

De-stemming takes a lot of time and time is not a luxury in a fast-paced kitchen. Instead of plucking the leaves of thyme and cilantro one by one, you can take the stalk of the herb in your hand and pull it in the direction opposite of the stem. This will allow all the usable leaves to come off in an instant. 

Get a rasp grater on your kitchen 

A rasp grater is every cook’s best friend in the kitchen. You might think that it is only usable in zesting lemons, but that is completely wrong. You can use it in a variety of ways including grating garlic, nutmeg, shallots and cheese. You can even use it on chocolate so it is better to have one in your kitchen at all times. 

How to make the perfectly crispy bacon 

Bacon might be a staple food in the United States, but that doesn’t make it any easier to use. To create the perfect bacon that has a crispy exterior but is juicy inside, you need to ditch the frying pan and trade it for an oven.

Place your bacon strips on a baking sheet lined with a metal rack and let it cook in the oven for 15 to 20 minutes. This method is perfect for allowing the fat to drip down on your bacon while the heat works all around the meat creating a juicy and crispy bacon. 

Always stack up on cornstarch 

Cornstarch has a variety of uses in the kitchen. You can use it as your breading to give your dish a crispy shell or you can use it to thicken the consistency of your soup or sauce. The best way to use cornstarch is by diluting it first in equal parts water. Never put the cornstarch directly on your soup or sauce since it would clump up and your dish would appear lumpy. 

Have a homemade spice mill 

Homemade spice mills are a treat to have. It’s every chef’s dream and you can have it right at home by using your old coffee grinder. Put all of the spices that you want on the grinder and mill away!

Keep your herbs fresh for months 

It can be troublesome to keep herbs fresh all the time. Not to mention that it is also expensive. This is why our chefs decided to share their tips on keeping your herbs fresh for months on end. What you can do is to keep your herbs in an ice cube tray and pour olive oil or melted butter over them. Once you are done, freeze it and use one cub for a quick flavour boost every time you need it.

Ripen your avocados faster or slower 

If you are cooking meals with avocado but it isn’t quite ripe yet, we recommend placing your avocados in a brown paper bag along with a banana. This will ripen your avocados within 24 hours! If you want to slow down the ripening of your avocado, you can put it in the fridge. This will keep your avocados fresh for a longer period of time as well. 

Zero waste sauce preservation  

If you have leftover sauce and don’t want to waste it by throwing it away. You can use an ice cube tray and pour your sauce on the tray. You can then freeze the sauce and use a cube or two when you need it! 

Don’t waste leftover coffee

Wasting food is a cardinal sin in the kitchen. It doesn’t just call on pests, but it also affects the environment. For that reason, you can use this trick to cut down on your coffee waste. Pour over your leftover coffee on an ice cube tray and let it freeze. You can use the cubes on your morning coffee and pour hot milk over it! Not only is it a delicious treat but it also saves you money and prevents excessive food waste.

Creating frothy coffee

If you are a fan of frothy coffee, there is an easy way that you can create this delicious meal and that is by adding your coffee and milk to a blender and whirling it around for thirty seconds. Be sure that the coffee is piping hot to create the perfect froth. 

Cracking the egg perfectly 

Nobody likes shells on their eggs and that is something you should avoid as a cook. According to our professional chef, one way to perfectly crack an egg with no stray shells is by cracking it on a flat surface instead of in a corner of the bowl. This method will prevent the egg from breaking into small pieces. 

Clean your counter all the time

Never leave your counter dirty. It is tempting to leave it up to the assigned personnel, but keeping your counter clean allows you to move more freely and gives you a sense of control in handling your dish. You don’t have to wash the dishes right away. You only need to organise the stuff that you used and pile them up properly. You not only make the dishwasher’s job easier but you also keep your counter clean.

Use stock instead of water 

Beef or chicken stock can add an instant flavour boost to your dish if you use it instead of water. We recommend always stacking up on your broths and avoid watering it down to keep the flavours full.

Frozen vegetables are the best! 

It is often overlooked, but frozen vegetables are actually better since it has the same refreshing flavour as fresh vegetables, but it is easier to have in a pinch. Moreover, it allows you to keep your veggie for a longer time.

Colombian cuisine is a unique experience all on its own. Not only does it have a different flavour than the foods that would have in the United States, but it is also vastly different in the way that it is prepared. For this reason, it is a fun challenge for non-Colombian natives to try out in the kitchen.

If you are a beginner, you might have difficulty crafting these Colombian dishes to life. That is why we have compiled the easiest Colombian foods to make regardless if you’re a seasoned chef or a novice cook. Get a full course of the best dishes Colombia has to offer without pulling a muscle in the kitchen. Let’s get right to the list of recipes below: 

Pan de Coco bread 

Pan de Coco bread is a popular snack all over Colombia. It is a soft bread filled with a sweet coconut filling that melts in your mouth. The slightly burnt and caramel taste of the coconut adds a delicious twist to your regular bread meal. What’s amazing about this bread is that it is filling and could help satisfy your hunger with just a few loaves. 

You can eat this bread for breakfast and pair it with your favourite Columbian blend coffee or serve it as a snack on a lazy afternoon as you chill with your friends. No matter when you want to eat it. Pan de coco is a delectable treat to have on the table. Here are the ingredients that you would need: 

  • 500 grams of wheat flour for bread or use a strong white flour 
  • 200 millilitres of coconut milk or a can of coconut milk 
  • 100 grams of butter 
  • ½ teaspoon of salt
  • 100 grams sugar 
  • 2 tablespoons of vanilla essence 
  • 1 beaten egg to glaze 
  • 1 sachet of dry yeast (7 grams)
  • 100 grams of dehydrated grated coconut to cook and decorate

Crab rice or Arroz atollado de cangrejo 

This delectable and hearty recipe is hailed from the Pacific coast region. It is often packed with different seafood meats and combined with a wonderful array of tropical flavours. Traditionally, it is prepared with coconut milk to give the rice a rich and mildly sweet taste as well as a fragrant smell. Once you eat it, you will find that the mellow flavour of the rice blends well with the umami flavour of the seafood. Take a look at the list of ingredients below: 

  • 2 tablespoons of oil (Avocado oil or olive oil)
  • 1 tablespoon butter 
  • 1 white onion finely chopped
  • 2 scallions finely chopped 
  • 1 red bell pepper finely chopped
  • 4 cloves garlic minced 
  • 2 tomatoes peeled, seeded and chopped
  • 1 cup long-grain white rice 
  • ½ cup organic vegetable broth 
  • ½ teaspoon ground achiote 
  • 2 cups coconut milk 
  • ½ teaspoon ground cumin 
  • ½ pound fresh cooked crabmeat 
  • Salt and pepper to taste 
  • Fresh cilantro leaves chopped

Hot chocolate and cheese bread 

This combination is popular in Colombia, especially for kids. You might find it as a snack all across the country since Colombia is popular for its cacao plantations. Usually, the hot chocolate is served with cheese bread or a slice of cheese dropped directly in the drink. It might sound different from your usual hot chocolate in the United States, but it is a surprisingly fitting combination with the saltiness and creaminess of the cheese balancing the strong and sweet flavour of chocolate. Take a look at the ingredients below: 

  • 1 litre of coconut milk
  • 4 tablespoons of chocolate drink mix or melted chocolate 
  • 1 tablespoon vanilla extract 
  • A slice of cheese 

Ajiaco 

Ajiaco is one of the most popular traditional dishes in Colombia. It is a warm and hearty meal that is made of simple ingredients you will find in the market. What’s amazing with this dish is that it can go with any meal and dish. If you want, you can even have it on a rainy day to give you a soothing and comforting feel. Here’s an easy recipe that you can follow: 

  • 2 quarts of homemade chicken stock (you can make it by boiling the chicken for a few hours)
  • 1 whole bone-in, skin-on chicken breast, split into small cubes 
  • 1 large onion cut in half 
  • 2 bay leaves
  • 2 pounds of russet potatoes peeled and cut into 1-inch chunks 
  • 2 pounds papas Criollas peeled 
  • 1 pound red bliss potatoes peeled and split into four pieces lengthwise 
  • ¼ cup dried guascas 
  • 2 ears of corn, shucked and broken into 3 pieces 
  • 1 small onion finely diced 
  • 2 tablespoons chopped fresh cilantro 
  • 1 serrano or ½ jalapeño chile seeded and finely minced 
  • Kosher salt and freshly ground black pepper
  • ½ cup sour cream thinned with 1 tablespoon of milk 
  • ½ cup capers rinsed, drained and roughly chopped 
  • 1 ripe avocado, light-green Fuerte variety sliced into wedges 

Colombian meatball stew 

If you are craving a slow-cooked meal, this meatball dish is perfect for you! It is a meal that all the kids love in Colombia and we are confident that it would be welcomed on your table as well. It is the perfect mixture of hearty, warm and savoury. Try out this perfect comfort food and breeze through the cold United States weather with a bowl of Colombian meatball stew:

Meatball 

  • 1 pound ground pork
  • 1 pound ground beef 
  • 2 large eggs beaten 
  • ½ tablespoon ground cumin 
  • ⅓ cup masarepa 
  • 2 garlic cloves minced
  • ½ grated onion 
  • 1 scallion finely chopped
  • ½ bell pepper finely chopped 
  • Salt and pepper to taste 

Stew 

  • 1 cup alinos sauce
  • Salt and paper to taste 
  • 4 cups of beef stock 
  • 1 cup tomato sauce 
  • ¼ teaspoon cumin powder 
  • ¼ teaspoon achiote or Sazon Goya with azafran 
  • 2 large potatoes peeled and cut into small pieces
  • 2 large carrots peeled and sliced crosswise 
  • ¼ cup of fresh cilantro 

Sobrebarriga or flank steak 

Flank steak is a kind of meat that is often avoided by cooks due to its tough meat. Colombians took up the challenge by using it in one of their best dishes. To make the meat softer, the traditional Colombian style of cooked suggests that you should slow cook the meat first before mixing it with the other ingredients. Take a look at the list of ingredients that you need to prepare below: 

Flank steak 

  • 2 pounds flank steak 
  • 8 cups water 
  • Slat and pepper
  • 1 large onion cut into two pieces
  • 2 scallions 
  • 3 garlic cloves 

Creole sauce 

  • 2 tablespoons vegetable oil
  • 1 red bell pepper chopped

Before being served, this dish is often topped with a serving of sunny side up egg seasoned with pepper, salt and cajun. Here’s how you can make it at home: 

  • 1 pound beef flap meat or skirt steak 
  • 1 tablespoon vegetable oil 
  • 1 tablespoon fresh oregano or dried oregano 
  • 1 teaspoon ground cumin 
  • 2 cloves garlic crushed
  • ½ teaspoon salt 
  • ¼ teaspoon pepper 
  • 1 large onion sliced in rings

In fact, it is so loved by the people of Colombia that a day dedicated to it is named World Arepa Day which takes place on September 2. This mouthwatering dish is perfect for cheese lovers who can’t get enough of the creamy and salty snack. What’s wonderful about arepas is that you can stuff them with practically anything including savoury meat slices town to fresh fruits and jams! Check out what you need to recreate this delicious snack at your home: 

  • 1 cup lukewarm water 
  • 1 egg
  • 2 tablespoons melted butter
  • 1 cup queso fresco shredded

On April 7th, 2020 only 11 days after a simple question was presented…”what can we do?”. Covid-19 came abruptly on the heels of the Nashville Tornado. The idea started several years ago truth be told. After reading the book Start Something That Matters by Blake Mycoskie, our concept was in seed stage. If you’re not familiar the author is the founder of TOMS shoe company. It’s a simple concept yet humanitarian at its finest. Buy a pair of TOMS shoes for yourself, and TOMS puts a pair on someone in need.

We have seen ourselves the economical effects of Covid-19 in our industry. Most of our chefs are entrepreneurial and just launching their new culinary visions often working more than one job in order to support their start up. Restaurants have cut back staff and chefs, culinary schools have closed, bars have let people go and events are cancelled. Leaving our culinary team unable to support their new entrepreneurial endeavours.

Grocery stores are a compromising place for the elderly and immune impaired. Many people are furloughed leaving them in financial stress. The ripple effects unfortunately will be seen for some time to come.
